Teen Doodle Journal

My great- niece
 will be having
 her birthday this month
so I made her a doodle booklet

I explained in this posting
 how I did these booklets

Chicken Parm Bites over pasta






PREHEAT the oven to 350°F.
 Coat a baking sheet with cooking spray. Cut chicken into 1 in bites


PLACE the chicken in a large bowl.
 Whisk together the egg and mustard
 in a small bowl. Pour the egg mixture
 over the chicken and
 stir to coat all pieces. 
Remove the chicken and
 shake off the extra egg. 
Place the chicken on a rack 
to allow excess egg to drain off.

MEANWHILE, combine the panko, 
Parmesan cheese, seasoning, 
and garlic powder
 in a large resealable
 plastic bag or container. 
Add the chicken and shake
 to cover all pieces.


 Remove the chicken, 
place on the baking sheet,


 and bake for 30 minutes, 
or until lightly browned and sizzling.


HEAT the pasta sauce
 while the chicken is cooking.
SERVE 1/2 cup spaghetti 
with one-quarter of the chicken
 2 tablespoons mozzarella cheese, 
and 1/2 cup pasta sauce.

1. I have got to be the worst speaker in the world

2. Although for the most part I love it, sometimes I wish I could just get rid of my computer. I think sometimes I am far to connected to it.

3. The best thing about where I live is the people.

4. Aside from a new house, car or big vacation, the first luxury I would buy myself if I won the lottery is I don't know There isn't much I personally want other than financial security and to help out some charities I believe in.

Choc Chip Scones




1/2 C wheat flour
1/2 C reg flour
1/2 C oats
3 Tbsp sugar
1 tsp baking powder
¼ tsp baking soda
½ tsp cinnamon
2 Tbsp unsalted butter
¼ C Greek yogurt
1 egg
1 tsp vanilla extract
¼ C mini chocolate chips

PREHEAT the oven to 400F.

MIX together the whole wheat flour,
 all-purpose flour, oats, sugar,
 baking powder, baking soda, 
and cinnamon in 
a food processor. 
With the processor running,
 add small cubes 
of butter one at a time.
 Process until the mixture
 looks crumbly. 
Add the yogurt, egg,
 and vanilla extract.
 Process just until well mixed.
 Add the chocolate chips. 
Process for about 10 seconds.

PLACE the dough on a
 lightly floured cutting board.
 Knead lightly to finish 
combining all the ingredients.
 Form into a ball,
 flatten into an 8" circle (1/2" thick)
 with your hands or a floured rolling pin, 
and cut into 8 wedges.


 Coat a baking sheet with cooking spray
 or use a nonstick baking sheet.
 Place the 8 wedges on the baking sheet.
BAKE for approximately 12 to 15 minutes, 
until lightly browned.

 1 scone = 160 calories

Travelin.....

A friend of mine 
is relocating
so I thought I would make
a journal/scrapbook for her
so this is a sketch pad turned travel journal
First I unwound the spiral binding




I had an atlas I used for the out sid
once I glued it on I reinserted the spirl binding

she will take

I combined the state bird, tree flower int he corner
then had the state stats
on the left is a pocket 
with the map of our town


 the next pg was for the town she is moving to
and then the next few pgs
are the history of the town she is leaving
